Lentil, Radicchio, Apple and Arugula Salad
Spring has officially sprung, and it’s time for salad season! Chinese medicine is all about eating with the season, so we recommend cooling foods like salads during the warmer months. Try out this unique and delicious one the next time you are craving a salad!
Salad dressing:
- 1¼ cups raw cashews
- 1 large lemon
- 1 tablespoon coconut oil
- 1 teaspoon ground salt
Lentils:
- 1 cup black lentils
- 2 garlic cloves, peeled
- 1 bay leaf
- 2 teaspoons of extra-virgin olive oil
- ½ teaspoon of salt
- 2 cups water
Salad:
- 1 head of radicchio, finely chopped
- 1 large Honeycrisp apple, thinly sliced
- ¼ cup fresh parsley leaves
- ¼ cup arugula
- 2 teaspoons extra virgin olive oil
- ⅓ cup pecans or walnuts, coarsely chopped
Start with soaking the lentils an hour before you want to cook them. Drain the water and wash thoroughly. Chop garlic, and bring the 2 cups of water to a boil in the pot. Add in the rest of the ingredients and cook until lentils are soft.
Mix the salad dressing ingredients into a food processor until creamy. Line the bottom of the salad bowl with it.
Put lentils on top, and then place finely chopped salad makings to finish.
