Sara Beth Erdman — A Specialist in Acupuncture and Oriental Medicine

I am thrilled to be joining the team at Selby Acupuncture!  I’ve always had an interest in medicine, wellness, and helping others to lead a healthier life.  After working in the corporate world for many years, I was inspired to make a career change after visiting a Traditional Chinese Medicine clinic while traveling in China.  I became fascinated by the focus that Chinese Medicine places on treating the whole person — mind, body, and spirit — and the power of this centuries-old medicine to heal such a vast array of conditions in our modern world.

I earned my Master’s degree in Acupuncture and Oriental Medicine from American Academy of Acupuncture & Oriental Medicine (AAAOM) in Roseville, and I am board certified and licensed in both Acupuncture and Chinese Herbal Medicine.  During my clinical internship I worked extensively in AAAOM’s Multiple Sclerosis Clinic and helped many patients manage and reduce the various symptoms associated with MS.  I also have a special interest in neurological disorders, pain management, women’s health, and depression & anxiety.

Selby Acupuncture Is Growing

Exciting news is brewing here at Selby Acupuncture!  This fall we are adding an amazing acupuncturist (meet Sara Beth Erdman!) and 3 additional treatment rooms.  In October our new larger clinic will be ready, we are expanding into the space next door so will not be hard to find, in fact our entrance will be moving just one door to the north.

By growing we hope to be able to serve you better, offering more appointment times and flexible hours. Keep your eyes out for news of our open house celebration.  We look forward to celebrating our expansion with you this Fall!

The Birth and Baby Expo is here again!  This is a fun event at the Midtown Global Market 10-3pm. Goji Berries: Delicious and Full of Healthful Benefits

Goji berries heart photoWe are now offering goji berries in the clinic.  Goji berries are also commonly known as wolf berries.  They have been getting a lot of press lately as a superfood that is a very high antioxidant.  I have seen it produced in many forms including juice, powder and goji extract. Though this is the first time we are offering them here at Selby acupuncture as a stand alone product, we have been using them for years in our herbal pharmacy.   In Chinese medicine the goji berry is a very strong tonic. When in school our professors lightheartedly described goji berries as the fountian of youth.  Goji berries are said to be great for you skin, and can help keep your eyes and brain young. They are rich in vitamin A which may account for why they are known for their anti-aging benefits.

Clinically we use them for many issues, not just as an anti- aging supplement.  Goji berries is a strong yin and blood tonic, I recommend all women who are pregnant or trying to become pregnant to add goji berries as a daily supplement.  Theses berries can help regulate the menstrual cycle and help to build a solid foundation

Roasted Butternut Chowder with Apples and Bacon

Roasted Butternut Chowder with Apples & Bacon

This is a delicious recipe to enjoy the best of the fall flavors. To make this soup more filling, you can add some cooked brown rice.

Makes about 4-6 servings

Ingredients:

1 butternut squash, about 1 ½ pounds, peeled, seeded and cut into cubes

1 large onion, chopped

2 large apples, peeled, cored and chopped

4 turkey or pork bacon slices

1 can cannellini beans, rinsed and drained

2 TBS minced garlic

Salt and pepper to taste

3 TBS olive oil

1 TBS chopped fresh sage or 1 tsp dried

½ cup dry white wine or water

6 cups vegetable or chicken stock or water

Directions:

  1. Heat the oven to 400 degrees.
  2. Spread the squash, onion, apples, bacon and garlic in a deep roasting pan or on a baking sheet.
  3. Sprinkle with salt and pepper and drizzle with oil.
  4. Roast, stirring every now and then, until the squash, onion and apples are tender and browned and the bacon is crisp, which takes about 45 minutes.
  5. Remove the roasting pan from the oven. If you’d like, you can blend some of the squash to make a thicker broth (optional).
