Cancer Fighting Vegetables

According to the American Institute for Cancer, there is solid evidence that cruciferous vegetables can protect against cancer.

Widely considered to be one of the healthier food choices is the cruciferous vegetables. Included in this family of vegetables are broccoli, cauliflower, radishes, brussels sprouts, kale, cabbage, and bok choy. Cruciferous vegetables are high in vitamins, fiber, and potent anti-cancer phytochemicals.

Studies have shown that this vegetable group has the ability to stop the growth of cancer cells for tumors in the breast, uterine lining, lung, colon, liver, and cervix. And studies that track the diets of people over time have found that diets high in cruciferous vegetables are linked to lower rates of prostate cancer.

It is recommended that we eat 3-5 servings of cruciferous vegetables per week.  These power-packed veggies are in season and readily available so scan your local farmers market, grocery store or CSA.

The Loaded Bowl

This delicious recipe is courtesy of Maggie Christopher, holistic nutrition counselor.

The Loaded Bowl

Serves 8 generously

This dish has everything you need  . . . protein (quinoa and beans), healthy fat (avocado & olive oil), greens (fresh spinach) and an energy sustaining whole grain!

The dressing is just for drizzling right before you eat it. Do NOT mix the quinoa with the dressing when you are preparing this dish or it will get soggy.

Ingredients:

2 cups quinoa, rinsed and drained

1 15oz can of organic black beans, drained and rinsed

1 pint cherry tomatoes, halved

1-2 cups fresh spinach, chopped

1 cup fresh cilantro (adjust to your taste)

2 avocados, pitted and peeled

Fresh lemon juice, to prevent avocado from browning

Sea salt and ground black pepper to taste

Juice from 2 limes

Zest 1 lime

Dressing:

¼ cup olive oil

¼ cup brown rice vinegar

2 cloves of garlic, minced

Sea salt and pepper, to taste

Directions:

1.     Prepare quinoa. Boil the water, add quinoa, reduce to a simmer until all of the water is absorbed. When done, store in the refrigerator to cool completely.

Military Support Clinic

Last September we began offering acupuncture treatments as part of a specialized military support clinic. The goal of this specialty clinic is to help soldiers and their families manage the stress associated with military life. We have put together an acupuncture protocol designed to help combat stress and restore emotional and physical health.
