This recipe is so flavorful and satisfying — you’ll forget you’re eating something so good for you! It’s a client favorite. Keep in mind that using organic ingredients will only enhance your flavor and increase the amount of vitamins and minerals in the dish.
Ingredients:
1 tsp organic, unrefined olive oil
1 onion, chopped
3 cloves of garlic, peeled & chopped
¾ cup uncooked quinoa (preferably soaked overnight)
1 ½ cup broth
1 tsp cumin
¼ tsp cayenne pepper (less if you don’t like spicy dishes)
Add salt and pepper to taste
1 cup frozen corn
2 (15oz) cans of black beans, drained & rinsed
½ cup chopped fresh cilantro
- Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and sauté until translucent.
- Mix quinoa into the saucepan and add vegetable broth. Season with cumin, cayenne pepper, salt and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes. Quinoa should be soft and fluffy when done.
- Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.
