Collagen Gummy Bears!

Collagen is the most prevalent form of protein found in our bodies. Unlike our ancestors’ diets, most of ours are poor sources of this amazing substance. Collagen helps to form our digestive organs, skin, joints, and other connective tissues. Collagen is also an excellent pre-biotic, meaning it helps provide a matrix for the bacteria in our digestive tract (without the gas and bloating sometimes associated with fiber!). Containing a complete array of essential and non-essential amino acids, collagen is the super-food you have been craving to connect with.

Here is a simple recipe for making your own Collagen Gummies.

  • 3/4 cup sugar free tart cherry juice
  • 1/4 cup fresh squeezed lime juice, strained
  • 2 tbsp. raw honey or to taste sugar substitute
  • 3 tbsp. Gelatin

  1. In a saucepan, heat the juices over medium heat until hot but not boiling.
  2. Add honey and stir till dissolved. If using a sugar substitute I prefer to add it once I’ve taken the concoction off the burner as sometimes these can turn a bit bitter if heated.
  3. Lower the heat to the lowest setting. Whisk in 1 tbsp. at a time of the gelatin, adding another only after the others dissolve. Continue to

Quick & Easy Crustless Quiche (great for keto, low carb & diabetic lifestyles)

In Traditional Chinese medicine, eggs are thought to tonify blood, yin, and jing (our essence) – as well as help regulate blood circulation. Because of their medicinal properties, eggs can be extremely helpful in restoring the body and strengthening reproductive health.

This recipe is a staple in my house – and bonus, it freezes well! The ingredients listed below are a great way to use holiday leftovers, but you can use whatever combination of protein and veggies you like. I have used chicken and broccoli, added spinach, chorizo instead of ham, and even ground beef made with taco seasoning. I usually serve with avocado, salsa, and sour cream. Feel free to get creative! (You will not miss the crust at all.)

  • Ingredients:
    • 2 Tbsp butter
    • ½ cup ham, cubed
    • 1 med red bell pepper, chopped
    • 1 med green bell pepper, chopped
    • 1 cup shredded cheddar cheese
    • 10 large eggs
    • ½ cup heavy cream
    • ¾ tsp salt
    • ½ tsp black pepper

Instructions:

  1. Preheat oven to 350 degrees. Grease a pie pan or 9 by 13-inch baking dish.

Easy to Digest Garlic, Ginger, and Cilantro Burgers

Are you looking to increase your iron but have a hard time digesting red meat? These burgers are a great way to do both and we should mention they are also delicious!

There are two key ingredients in this recipe. The first is fresh ginger which aids in the digestion of meat. The other lovely ingredient to be mixed into the patties is garlic. Garlic is a prebiotic which helps the good bacteria in our gut out by having something to attach to. Garlic may also be especially beneficial because it contains the phytonutrient allicin. This phytonutrient is hypolipidemic and could have cholesterol lowering effects.

Ingredients:

  • 3-4 pinches Pink Himalayan Salt
  • 3 pinches Fresh Cracked Pepper
  • 2 Tsp Olive Oil
  • 5-6 Garlic Cloves Cleaned and Chopped
  • 1 Small, Fresh Ginger Root Peeled and Minced
  • 1 Bunch Cilantro Washed and Chopped
  • 1 lb. Organic Ground Beef

Kitchenware:

  • Mixing Bowl
  • Cutting board
  • Chopping Knife
  • Garlic Press (Optional)
  • Frying Pan
  • Spatula

Time: 30 minutes

Instructions:

  1. Place raw beef into a mixing bowl.
  2. Add about 3-4 pinches of salt and 3 pinches of pepper or to your own liking.
  3. Add minced ginger and chopped garlic and a small handful of chopped cilantro
